Theolive oil “Goût à l’Ancienne ” (black fruity), reminds us of the time when olive growers fermented mature olives before pressing. This fermentation usually gave unique aromas of cocoa, truffle, mushroom, olive paste sometimes appeared and made the olive oil exceptional. Today, some traditional mills still use this process but in a controlled manner to avoid the olive oil becoming rancid.
